How to make French pancakes: crêpes


It's another rainy day in the Netherlands,... A rainy and cool Sunday, you prefer to stay home and cocoon! What about doing some crepes and give you a treat?

For 24 crepes:

- 250 gr. of wheat flour
- 3 eggs
- 1/4 L of milk
1/4 L of water (or beer)
- 2 tablespoons of sunflower oil
- 1/4 teaspoon of salt

1/ In the middle of the wheat flour, put the half of the liquids and whisk properly.

2/ Once the mixture is really smooth, add the mixed eggs, and blend again. Then put the salt and oil, and then finish with the rest of water and milk mix.

The mixture should be really smooth and to much liquid. If there is lumps, use the blender a couple of minutes.

3/ Let the mixture rest for 1h.

4/ Then in frying pan, put some oil or butter, and when it is really hot, put one dipper and make the mixture spread well on all the surface of the fried pan. 2/3 minutes later, turn it and let it fry for 1 more minute.

5/ Keep the pancakes warm on a plate placed on top of a hot water bowl. Enjoy with any fill you like!

My mum's favorite crêpe is with some sugar and Grand Marnier,... it is really, really, really good! try it!
