Spring Veggie Quiche

This is a quick and easy tart recipe, perfect for a light lunch with girlfriends as I had today! 
It takes 30 minutes!

Take a puff pastry dough and place it in a tart mold. Pinch it with a fork and put some oven paper with dry beans and put in the warm oven at 180ºC for 10 minutes to pre-cook it.

In the meanwhile, in a fried pan, cook for 5 minutes 100 grs of diced bacon and 1 spring onion sliced thinly. You don't need to add oil, the bacon is fat enough! Reserve it.

In a bowl mix 4 eggs, salt and pepper (not too much salt because the bacon and cheese are already quite salty), and sliced chives. Cut some red piquillo pepper and add it to the eggs as well as the bacon.

Take out the dough from the oven, and spread the mixture. Cover with slices of emmenthal and put it back to the oven for 20 minutes at 180ºC.

Serve it with some nice green salad and you have a perfect lunch!
