Gluten free true lemon pie

I keep on seeking and experimenting with gluten free recipes to suit to my celiac friends. My unique goal is to be able to create typical recipes, with similar texture and taste as the normal version, without the gluten! It is quite challenging, but my last recipe of the apricot kind of brioche tart really stunned me!

So, I keep on trying! Today I will make a true LEMON PIE!

 It is important to note that I really want to find the same texture of the crust and above all, I want a lemon curd that taste as the one my mum was used to cook but skipping the refined sugar and butter! This last ingredient was the most challenging, as I decided to just skip it. Read the recipe to find out how did it go!

Ingredients for 6 persons:

Dough inspired from another blog (cuisine-saine.fr):
  • 100 gr. of white almond paste
  • 60 gr. of agave syrup
  • 70 gr. of almond powder
  • 1 egg
  • 160 gr. of rice flour
  • 40ml soy milk
Lemon curd:
  • 4 eggs
  • 230 gr. honeysuckle honey
  • fresh thyme
  • 3 lemon juice and zest
First turn on the oven to 180C.

Gluten Free Dough
1/ Mix together in a bowl the almond powder and rice flour. Add the one egg, the agave syrup and the almond paste. Mix well, first with a spoon, and as soon as the dough gets harder, keep on mixing with your fingers! The feeling is divine!

2/ Add the soy milk and mix again well. Make a ball and let it 10 minutes in the fridge, before spreading the dough in a pie tin. Put it in the oven 10 minutes to precook the crust.

3/ In the meanwhile, prepare the lemon curd. Put together the honey, eggs and lemon juices as well as the lemon skin thinly sliced. Whisk well till you get a nice mixture. I had the urgent feeling to add a handful of fresh thyme leaves in the mixture and try the mix of flavors (sorry, we are out of the tradition already! but it is not compulsory!)

4/ When the crust starts to be lightly golden, take it out of the oven, pour the lemon cream mix in and put it back in the oven for 20 minutes.
When the lemon pie is ready, let it cool before serving!

5/ If you want to add a meringue on top, whisk 2 or 3 whites till stiff with 1 tbsp. of agave syrup. Spread on top and place for 5 minutes on the grill of the oven till the the picks of the meringues can get golden.

Gluten Free Lemon Pie with Thyme
I was really excited when I saw the lemon pie ready,... but also anxious about the taste and texture. My experiment with gluten free pastry are not always convincing,... but I am going to tell you: THIS IS HEAVEN! I could not believe how texture was amazing. The shortbread dough was looking as a real one. And my lemon curd was just amazingly delicious! 

So easy, so healthy, and we bit in a perfect lemon curd with the perfect balance of taste between sweet and sour. The honey taste and thyme was present but not overwhelming and the punch of the lemon was just exciting my taste buds! You really need to try the recipe!
