Gluten Free and Sugar Free Pecan pie
Pecan pie is one of the most traditional and delicious dessert for Thanksgiving besides the pumpkin one. I was always impressed by this dessert, and I thought this year was time to try it, and create a healthier gluten free with no sugar recipe. 

Ingredients for 1 pie for 8 persons:

- 150 gr. of pecan nuts
- 3 eggs
- 6 tbsp. of maple syrup
- 200 gr. of cooked sweet potatoes
- 6 tbsp. of melted butter or coconut oil
- 2 tbsp. of vanilla extract
- 1 pinch of salt

1/ Prepare the dough as explained on the Lemon Pie recipe and precook it in the oven 10 minutes. Let it cool.

2/ Mix in a bowl, the cooked sweet potatoes, eggs, maple syrup, vanilla extract, salt and butter. Whisk and mix till you get a smooth mixture.

3/ Pour on top of the crust. Decorate with some pecan halves and sprinkle some maple syrup on top as well.

4/ Cook in the oven for 30 minutes at 180ÂșC. Once the centre is firm, get it out and let cool down. The pie is even better the day after when all the flavors melted together.

5/ Serve with some coconut whipped cream, chocolate sauce or ice cream.
