Korma Chicken is a typical Indian dish that I discovered some years ago at India Corner, my favorite Indian restaurant in Haarlem. Chef Asif made me addicted to this recipe, with a complex spices mix and this incredible sweet touch. After years, and because I do not live in Haarlem anymore, I finally tried to repeat this piece of heaven... motivated by the Rose Wine tasting organized in Madrid. I must say the result is quite nice, even if I will never manage to be as delicious as the Korma chicken from Asif! 


This recipe is a perfect match with the Antidoto Rose wine from Ribera del Duero.

Ingredients for 4 persons:
- 1 big yellow onion
- 1 garlic clove
- 1 can of mango or 1 ripe mango mixed in puree
- 2 tsp. of Garam Massala
- 1 tsp. of crushed cardamon seeds
- 2 tbsp. of coconut oil
- 1 tsp. of turmeric powder
- 300 ml of coconut milk
- 400 gr. of chicken breasts

1/ In a frying pan,  stir fry the sliced onion and crushed garlic for 5 minutes, till it gets soft and the garlic starts to get golden. Add the garam massala spices mix and the cardamon. Stir and let it 2 more minutes.

2/ Add the chicken cut into small pieces and let it get golden as well. When the chicken is well colored on all faces, add the mango puree. Mix well.

3/ Add the coconut milk and mix well in order to make homogeneous. Add the turmeric powder. Slow down the heat, cover and let it simmer for 10 minutes. Stop, and let it sit. I would recommend to let it sit for a couple of hours or even cook it the day before.

4/ Serve it with some steamed rice cooked 15 minutes with the double quantity of water or coconut milk, cardamon pod, cinnamon stick and Kaffir Lime leaf. You also can decorate the dish with some fresh coriander or even mango and coconut shaves.

This is a sweet recipe for people who do not like spicy food, but still want to experience of the fragrant Indian flavors! Feel free to add more spices if you like it. I find this dish so addictive, I can eat it forever....
